Keep water in your fresh water tank. Obviously you won’t want them totally full when driving, but there’s no reason why you can’t have them filled when hooked up for several days or weeks.
You should have a store a non-perishable food. Even though space is tight, find some. Your best bet is to find dehydrated and sealed meals that you will only have to add water to in order to eat.
